Diced tomatoes- 1can
Salt and pepper
Brown rice-4 servings
Coat salmon in mayo and tomatoe mixture
Preheat skillet on Med. Low
Place salmon in skillet and pour remaining mixture on top. Cover. Cook 3-5 minutes on each side.
Cook rice according to package. Stop with 2 minutes remaing and add the bag of spinach. Cover and cook the last two minutes. Remove. Fluff and add Parmesan.
Place salmon on bed of rice and serve!
